This simply means that you need to dig a little deeper and get more specific within the niche.
If you were to search for "weight loss pills" you'd see a dramatically lower number of search results. Further, if you searched for "XYZ brand weight loss pills" the results would be even fewer, meaning less competition. You can automate parts of this sub-niche selection process and see monthly search volumes for keyword phrases by using Google's external keyword tool.
